This is a very beautiful cake; a rose red jello layer with lovely strawberry halves on top of a beige sponge cake... Everyone will give it a WOW at their first look!
But I have to say I think the texture of jello doesn't go really well with the sponge cake... well, as long as it can impress your friends...
Ingredients (8 inch)
1 pack Raspberry flavor Jello-O£¬60g cake flour£¬1/2 teaspoons baking powder£¬2 eggs, 3 tablespoons milk£¬ 2 tablespoons oil£¬1 tablespoon Rum£¬5 tablespoons sugar

To make the jelly layer

Pour in a thin layer of Jelly liquid

When the jelly is firm, arrange the strawberried on the jelly

Pour in some jelly liquid so that it can cover half of the berries (this step is to stablize the berries)
When the jelly is ALMOST firm, put the cake layer on (if the jelly is completely firm, it can't "glue" the cake)

To make the cake layer
1. Preheat the oven to 375F/180¡æ
2. Mix well all liquids except oil, add 3 tablespoons sugar, mix until all sugar dessolved.
3. Add the oil, mix well, shift in the flour, mix well then add the egg yolks.
4. Use electric beater to beat the egg whites, after a frothy foam formed, gradually add the rest of sugar (2 tablespoons) in several times, beat the whites for 1 min after each addition, until stiff peaks formed
5. Mix the egg yolk mixture and 1/3 of the white, then mix it with the rest of the white.
6. Bake for 20 min.
To make the topping
I use one pack of Jello-O, there's detailed instruction on the package (Please forgive my laziness ).

The way to make the layer, plz refer to the pics on the left. To turn out the jelly, use a warm towel to wrap arrond the mode or soak the cake mode in warm water for couple mins ( don't soak too long, the jelly will melt! )
NOTE: The cake layer should be a bit bigger than the jello layer since cake will shrink a bit after baking.
