Red date is very popular ingredient specially for females because it has great effect on ourishing blood, calming the mind for insomnia and restlessness, etc. I usually put a few red dates every time I make soups. This is actually the first time I used them to make a cake and it turned out very nice (like banana cake with red date flavor :p) ! I only used 1 tablespoon of oil and 1/2 cup of brown sugar for the entire cake; plus the great nutrients from the red dates, this is going to be most healthy cake I've ever made!!
Red Date Paste (makes 1/2 cup) 1 cup dry red dates, 1/2 cup brown sugar Cake 3 eggs, 1 tablespoon vegetable oil, 5 tablespoons all-purpose flour, 1/2 cup red date paste, handful of roasted walnuts (Please visit Glossary for explanations of ingredients and baking terms) Difficulty: ¡ï¡î¡î¡î¡î |
1. Cut the red dates open and remove the kernels. Cook the red dates with about 1 cup of water at medium for about half an hour until all dates are soft and could be smushed easily. 2. Add the brown sugar and keep stirring until most water evaporated (can turn the heat a bit higher to accelerate).
1. Prehaet oven to 175C. 2. Beat the eggs with oil using a electical beater until well mixed and thick. 3. Mix in flour, red date paste and walnuts, one at a time until well combined. 4. Bake for 35-45 min. |
