I made this for Valentine's Day last year. I was super busy at that time but still insist that gifts made are always better and more meaningful than gifts bought. The truffles themselves don't take a lot of time, it was just the box that took me a few days to think how to make.

Originally I wanted to make a box but then I thought of a more creative idea: turning an egg box into a gift box! The holes in the egg box are just perfect size for truffles~

Ingredients (yield 18 - 24 truffles)

Ganache

140g bitter-sweet chocolate £¬1/4 cup whipping cream, 1.5 tablespoon butter (softened at room temperature),

2 tablespoons Rum (I used Grand Marnier instead)

Coating

150g bitter-sweet chocolate, 1 cup cocoa powder (or/and other coatings like coconut flakes, almond flakes, candies, etc)

To make the Ganache

1.Grind the chocolate into fine powder, put the chocolate powder in a big bowl. Set aside

2. Heat up the whipping cream in a small pot. Turn off the heat when you see little bubbles come up around the side of the pot. Pour the cream into the bowl containing chocolate powder, let it sit for about 1 min.

3. Stir to dissolve all the chocolate in the cream to make a thick chocolate paste. Mix in butter. And then mix in the liquor.

4. Wrap the bowl with plastic wrapping. Put the bowl in a fridge for about an hour or until the Ganache wouldn't flow anymore.

5. Take the bowl out of the fridge. Scoop out small balls of ganache and place them on a clean pan.

 

To make the truffles

1. Put all the chocolate in a heat-proof bowl and melt it over simmering. Stop heating when the chocolate temperature reaches about 32-34C (about body temperature).

2. Coat the ganache balls with a thin layer of melted chocolate and roll them in a pool of cocoa powder (or other coatings).

3. Let the balls sit in the pool until the chocolate layer hardens so that the coatings wound't fall off.

4. Put all truffles in air-tight container or gift box and put them in fridge.
