I bought a new dessert book because I saw a picture of these chocolate kisses in it, they look so cute! These little chocolate sandwiches are originally from Verona, Italy, which are also called "Juliet's kisses" because that's where the romance between Romeo and Juilet happened. They are very easy to make and taste like... kisses! They just melt in your mouth, so soft, so sweet, irresistable!

1. In a large bowl, using an electric mixer set on medium speed, beat together the 1 cup butter, the icing sugar and the salt until light and fluffy. Beat in the rum. Stir in the flour and well blended. Cover and chill until firm, about 1 hour. 2. Preheat the oven to 350F (180C). 3. Scoop up the dough by the teaspoonful and roll each nugget into a ball. Place the balls about 1 inch apart on ungreased baking sheets. 4. Bake the cookies until firm but not browned, 10-12min. Transfer to wire racks to cool completely.
5. Place the chocolate and the 2 tablespoons butter in a small heatproof bowl. Set the bowl over (not touching) simmering water in a saucepan and heat until the chocolate softens. Remove from the water and stir until smooth. Let cool slightly. 6. Using a butter knife, spread a small amount of the chocolate on the bottom of a cookie. Place the bottom of another cookie against the chocolate, sandwich style, and press the halves together. Repeat with the remaining cookies. Let cool on the wire racks until the filling is set. Store in an airtight container in a cool place for up to 1 week.
